Twice cooked Pork
Ingredients:
1 pound lean, boneless pork
3 scallions sliced diagonally
1 tablespoon sweet bean sauce
1 tablespoon dry sherry
1 tablespoon soy sauce
Preparation:
1. Wash the pork and add to boiling water, with enough to make sure pork is fully covered.
2. Add the sherry and boil pork for 15 - 20 minutes. Allow pork to partially cool and cut into thin slices across the grain.
3. Heat wok to medium/high, add 2 tablespoons oil and add the spring onions. Stir fry for 1 minute.
4. Add the sweet bean sauce, soy sauce and pork slices. Stir fry for 3 minutes and season with salt to taste.
