Szechuan Chicken
This is a spicy dish, which get its heat from the chillies, Tabasco sauce and cayenne pepper.
Ingredients:
3 boneless chicken breasts
2 egg whites
2 tablespoons rice wine or dry sherry
2 tablespoons corn flour
1 tablespoon sesame oil (or 2 if preferred)
2 teaspoons Tabasco sauce
1 teaspoon Worcester sauce
2 tablespoons sugar (preferably brown)
¼ teaspoon cayenne pepper
1 teaspoon crushed dry chillies
1 tablespoon of grated ginger
2 or 3 spring onions (scallions)
1 green pepper de-seeded, cored and sliced
3 carrots cut into thin strips
Preparation:
1. Cut the chicken into strips.
2. Beat the egg whites with the corn flour and add the chicken, making sure to coat thoroughly.
3. Combine the ingredients for the sauce and set to one side.
4. Heat wok to medium high, and add the chicken, stir frying until it turns white.
5. Remove chicken and clean wok. Re-heat add more oil, then vegetables and stir fry for about 30 – 40 seconds.
6. Add the sauce and heat briefly. Serve with rice or noodles.
