Stir Fried Beef with Bean Sprouts
Ingredients:
1/2 - 3/4 pound lean beef
2 tablespoons soy sauce
1 tablespoon rice wine or dry sherry
1 tablespoon corn flour
1/2 tablespoon sugar
1 garlic clove, minced
1 cup fresh beansprouts
3 spring onions (scallions)
1 carrot cut into matchstick sized strips
1 slice ginger root
2 tablespoons Hoisin sauce
1/2 teaspoon sesame oil
Preparation:
1. Slice the beef into thin slices about 1 inch long, and marinate with the soy sauce, corn flour and rice wine or dry sherry. Marinate for about 20 minutes.
2. Heat the wok and stir-fry the ginger and spring onions for 2 minutes.
3. Add the beef along with the marinade ingredients, stir-fry until almost cooked, then add the beansprouts with the sliced carrot and stir-fry for a further 2 minutes.
4. Stir in the hoisin sauce and sesame oil and continue frying for about 30 seconds to 1 minute. Serve with rice or noodles.
