Stir Fried Beef Cantonese Style
Ingredients:
1/4 pound lean beef
1 teaspoon baking powder
2 scallions finely chopped
1 small onion finely chopped
1/2 teaspoon grated ginger
Beef coating mixture:
1 tablespoon rice wine or dry sherry
2 to 3 tablespoons oyster sauce
1 tablespoon corn flour
Preparation:
1. Cut the beef into thin slices and lightly dust with the baking powder.Set aside for 45 minutes to 1 hour, then coat the beef with oyster sauce, dry sherry, corn flour mixture and leave for 50 to 60 minutes.
2. Heat the wok over a high heat and add 3 tablespoons of oil.
3. Stir-fry the spring onions, onion and ginger.
4. Add the beef and stir-fry for 3 minutes or until meat is cooked through.
