Stir Fried Beef with Broccoli and Oyster Sauce
Ingredients:
1/2 lean beef
Marinade:
1 tablespoon soy sauce
1/2 tablespoon rice wine or dry sherry
1 teaspoon corn flour
pinch of sugar
salt to taste
1 tablespoon oil
Other:
2 - 3 small heads broccoli
2 1/2 tablespoons oyster sauce
2 spring onions (scallions) cut diagonally into 1 inch pieces
pinch of sugar
Preparation:
1. Cut the beef into thin slices and marinate for about 25 minutes.
2. Boil the broccoli for 3 minutes or until just tender, then cut into 3 - 4 inch lengths.
3. Heat the wok and stir-fry the beef until almost cooked, then remove.
4. Stir-fry the broccoli for one minute, remove and leave aside.
5. Add the spring onions to the wok and stir-fry for 2 - 3 minutes.
6. Add the beef, sugar, oyster sauce and stir-fry for 1 minute or until beef is cooked.
