Spicey Chinese Pork
Ingredients:
3/4 - 1 pound lean pork, cubed
2 tablespoons groundnut oil
1 tablespoon corn flour
dash of red pepper sauce
2 garlic cloves finely chopped
1 green or red pepper cut into strips
2 spring onions (scallions)
1 onion, chopped
2 drops sesame oil
1/2 lemon squeezed
6 tablespoon soy sauce
1 small cup water
4 tablespoons sugar
Preparation:
1. Mix the pork cubes with 2 tablespoons soy sauce and leave to marinate for 35 minutes.
2. Combine the lemon juice, sugar, pepper sauce, sugar, cornflour and the water. Set aside.
3. Heat the wok on high heat, add 2 tablespoons oil and stir fry the pork until brown. Add the pepper and cook for a further 3 minutes.
4. Add the combined ingredients mixture to the wok and cook until the sauce becomes thick. Add the sesame oil. Serve over rice. Garnish with the spring onions.
