Shrimp Fried Rice
Ingredients:
2 1/2 cups cooked rice, cold
2-3 tablespoons groundnut oil
1 teaspoon salt, or to taste
1 small onion finely chopped
1-2 eggs beaten
2 spring onions (scallions) finely
chopped
1 - 2 cups shrimp, de veined and shelled
2 tablespoon soy sauce
1/2 cup partially thawed frozen green peas
2-3 slices ham cut into 1x1/2 strips (trim fat off if desired)
couple drops sesame oil
Preparation:
1. Heat the wok to medium/high and add the groundnut oil.
2. Stir fry the chopped onion and ham strips until slightly brown, then add the shrimp and eggs.
3. Keep the mixture moving until eggs are scrambled.
4. Add the peas, rice and salt to the wok and continue to stir fry for 2 - 3 minutes.
5. Add the chopped spring onions, soy sauce and sesame oil then mix well through the rice. Serve hot.
