 Shredded Pork Stir Fry

Ingredients:

150g boneless, lean pork
1/2 teaspoon salt (or to taste)
2 tablespoons soy sauce
2 teaspoons rice wine or dry sherry
1/2 teaspoon sugar
1 garlic clove, minced
1 red pepper cored and de-seeded
2 spring onions (scallions finely chopped
dash hot chilli sauce

Preparation:

1. Cut the pork and pepper into thin strips. Mix the pork, soy sauce, rice wine and sugar together with a few drops of sesame oil.Leave to marinate for 25 - 30 minutes
2. Heat wok to high and add the pepper.Stir fry for 45 seconds, then remove.
3. Add the garlic to the wok and fry for 30 seconds.
