Shredded Pork Fried Rice
Ingredients:
2 eggs, beaten
3 - 4 cups cooked cold rice
1 cup roast pork, shredded
1 tablespoon oyster sauce
1 small onion, finely chopped
2 spring onions (scallions) finely chopped
1 - 2 tablespoons light soy sauce
1/2 teaspoon salt, or to taste
1 teaspoon sesame oil
ground nut oil
Preparation:
1. Heat the wok to medium/high heat and add 2 tablespoons of ground nut oil.
2. Add the shredded pork, stir-fry and remove.
3. Add more oil if required and stir-fry the onion for about 2 minutes.
4. Pour in the beaten egg and stir well to scramble.
5. Add the rice, mix well with the onions and egg. Season with salt and add the soy sauce.
6. Add the pork back to the wok along with the spring onions, sesame oil, oyster sauce and mix well through. Serve hot.
