  Shredded Beef Stir Fry with Spring Onions

Ingredients:

3/4 pound flank steak, shredded
1 tablespoon corn flour
3 tablespoons soy sauce
1 teaspoon sugar
2 teaspoons corn flour mixed with 2 teaspoons water
2 tablespoons dry sherry
10 - 12 sliced of shredded ginger root
1/2 teaspoon sesame oil
3 spring onions (scallions) cut diagonally into 1 inch peices
2 garlic cloves, minced
1 small carrot cut into matchstick size strips

 

Preparation:

1. Dust the beef with the corn flour and salt, then sprinkle over 1 /1/2 tablespoons oil.
2. Heat wok to high and add the beef and ginger. Stir-fry for 2 to 3 minutes.
3. Add the soy sauce, sherry, sugar, sesame oil and corn flour and stir in with the beef. Continue to stir-fry for about 1 minute.
