Pork with Bamboo Shoots and Cashew Nuts
Ingredients:
1 pound lean boneless pork, cut into strips
1 teaspoon salt
1 tablespoon rice wine or dry sherry
2 1/2 tablespoons soy sauce
2 tablespoons ground nut oil
1 small cup drained bamboo shoots
1 onion sliced
2 ounces of cashew nuts. You can use unsalted peanuts if preferred
1 large garlic clove minced
1 small cup beansprouts
3 drops sesame oil (optional)
3 - 4 spring onions
2 tablespoon corn flour mixed with equal parts water
Preparation:
1. Mix the soy sauce with the rice wine (or sherry), sugar and salt then set aside
2. Heat the wok on high and add the oil.
3. Add the sliced onion, spring onions, garlic and beansprouts. Fry for 1 minute.
4. Add the pork to the wok and stir fry for 1 minute, then add the bamboo shoots and cook for a further 4 minutes.
5. Pour in the corn flour mixture and stir until sauce thickens. Add the sesame oil, if using.
6. Sprinkle in the cashew nuts or peanuts and mix well.
