Pork Chop Suey
Ingredients:
1 pound pork
2 small bunches bok choy or broccoli
1 small cup bamboo shoots
1 green pepper cored and de-seeded
2 celery stalks
1 onion
marinade for pork:
1 tablespoon oyster sauce
1 teaspoon salt
1 teaspoon corn flour
touch of pepper to taste
Sauce:
3 - 4 tablespoons water
1 teaspoon oyster sauce
1 teaspoon corn flour
Preparation:
1. Mix the seasonings for the pork.
2 Cut the pork into thin strips and coat thoroughly in the mixed seasoning. Leave to one side, and marinate for 15 minutes.
3. Mix the ingredients for the sauce and leave aside.
4. Cut the bamboo shoots into thin strips (you can leave them thick if you prefer) and slice mushrooms. Slice the green pepper thinly. Separate the leaves and stems from the bok choy and cut across diagonally. Do the same for the celery sticks. Peel and slice the onion thinly.
5. Heat the wok to a medium high temperature and add oil. Then when oil is hot enough, add the pork and stir fry until pork is ready ( the pinkness should be gone).Remove pork and set aside.
6. Re-heat the wok and add more oil if required. Stir fry each of the vegetables. Add some water while cooking the bok choy for extra moisture, as it can be dry. Remove vegetables once cooked.
7. Re-heat wok and add the pork and cooked vegetables and combine all the ingredients. Give the sauce a quick stir and add to the pork and vegetables. Boil and then simmer for 2 - 3 minutes.
