  Pork and Hoisin Sauce Stir Fry with Mushrooms


Ingredients:

1 pound boneless pork, cut into small chunks
3 tablespoon hoisin sauce
4 tablespoon soy sauce
2 tablespoons water
2 tablespoons rice vinegar
3/4 tablespoon hot chilli sauce (or to taste)
3 spring onions (scallions)
1 small onion finely sliced
1 garlic clove, minced
a few drops sesame oil

Preparation:

1. Wash the mushrooms and gently pat dry. Remove the stems and slice thinly.
2. Mix the chilli sauce, soy sauce, rice vinegar, water and hoisin sauce in a bowl.
3. Marinade the pork in half of the mixture for 20 minutes and reserve the other half.
4. Heat wok to high and add 2 tablespoons oil. Stir fry the sliced onion for 1 minute.
5. Add the garlic and fry for 20 seconds before adding the pork. Stir fry until browned or no longer pink.
6. Add the mushrooms to the wok and stir fry for 3 minutes or until softened.
