Pork and Cashew Nut Stir Fry
Ingredients:
1 pound boneless lean pork
3/4 tablespoon salt
1 tablespoon rice wine or dry sherry
2 tablespoon soy sauce
1/2 teaspoon sugar
1 garlic clove, minced
3 spring onions chopped quite finely
1 cup fresh beansprouts
1/2 cup bamboo shoots
1 tablespoon corn flour
few drops sesame oil (or to taste)
Preparation:
1. Combine the soy sauce, sugar, salt, rice wine, sesame oil in a bowl and set aside.
2. Heat wok on high, add the garlic, spring onions and stir fry for about 1 minute.
3. Add the pork and fry for 1 minute, then add the beansprouts, cover and simmer on low heat for about 4 minutes.
4. Mix the corn flour with one tablespoon water and stir in to thicken sauce, then sprinkle in the cashew nuts and mix well before serving.
