Pork with Bamboo Shoots and Water Chesnuts
Ingredients:
1 pound lean pork
1 tablespoon sherry
1 teaspoon ground ginger
1 teaspoon brown sugar
1/2 cup bamboo shoots
1/2 cup water chestnuts
1 teaspoon sesame oil
3/4 - 1 litre water
Preparation:
1. Mix the soy sauce, sherry, sugar, ginger and sesame oil. Cut pork into small cubes and add to the mixture. Coat thoroughly and set aside for 10 - 15 minutes.
2. Heat a large pan and add the pork along with the mixture along with the water and bring gently to a boil. Turn down heat and simmer for about 1 hour.
3. Drain the bamboo shoots and slice thinly. Do the same for the water chestnuts. Add both to the pan and simmer for 10 minutes. If you want a thicker sauce, then add 1 tablespoon of cornflour mixed with 1 tablespoon water near the end of cooking, until sauce thickens.
