Oyster Sauce Stir-Fried Chicken
This delicious dish, adheres to the very best principles of Chinese cooking - quick, fresh and delicious - like most Chinese recipes that rely on preparation beforehand.
Ingredients:
1 pound boneless chicken breasts cut into strips
1 green pepper cored and seeded
2 tablespoons soy sauce
1 small onion, finely sliced
2 spring onions (scallions) cut diagonally to approx 1 inch
1 small carrot cut into fine strips
4 to 5 tablespoons oyster sauce
half cup of chicken stock mixed with 1 tablespoon cornflour
fresh medium egg noodles or packet if not available, prepared according to instructions
1 teaspoon sesame oil
Ground nut or peanut oil for frying
Preparation:
1. Heat wok to high then add in about 2 tablespoons oil
2. Add the chicken and stir fry until cooked through, then remove from wok
3. Clean the wok, heat to high again and add some more oil
4. Add the onions with the spring onions, and stir-fry for about 1 to 1 1/2 minutes
5. Add the carrot and pepper and stir-fry for a further 2 minutes
6. Add the chicken once more to the wok, along with the oyster sauce and stir fry until ingredients are well mixed through
7. Pour in the chicken stock/corn flour mix, then the soy sauce, sesame oil and fry for 30 seconds.
8. To the wok, add the noodles and coat/mix well with the rest of ingredients. Garnish with finely chopped spring onions if preferred
