  Onion and Beef Stir Fry


Ingredients:

1/2 pound lean beef, shredded
1/2 teaspoon salt
2 tablespoons soy sauce
2 slices shredded ginger root
1 teaspoon sugar
2 garlic cloves, minced
1 onion, thinly sliced
1 tablespoon dry sherry
2 tablespoons oyster sauce
1/2 teaspoon corn flour
ground nut or vegetable oil for frying
1 teaspoon corn flour mixed with 2 tablespoons stock or water.

Preparation:

1. Mix the soy sauce, sherry, salt, corn flour and 1 tablespoon oil with the beef. Marinate for 15 - 20 minutes.
2. Heat the wok to medium/high and add 2 tablespoons oil.Stir-fry the ginger and sliced onion for 2 minutes.
3. Push the onion and ginger to one side and add the beef, garlic and more oil if required. Stir-fry for about 1 minute or until beef has browned.
4. Add the oyster sauce and mix with the beef and vegetables.
