Mongolian Chicken
Ingredients:
1 pound boneless chicken breasts cut into 1x1/2 slices
1 cup beansprouts
1/4 cup chicken stock
1 large garlic clove, minced
2 spring onions (scallions) finely chopped
2 teaspoons sesame oil
2 tablespoons hoisin sauce
1 tablespoon soy sauce
1/2 teaspoon crushed dried chilli flakes
Marinade:
2 teaspoon white wine
2 tablespoons oyster sauce
1/2 teaspoon sugar
1 teaspoon cornstarch
Preparation:
1. Mix the chicken with the marinade and leave for about 45 minutes to 1 hour.
2. Combine the hoisin sauce, soy sauce, and chicken stock in a small bowl and set aside.
3. Heat wok and stir fry the chicken for about 3 minutes until white and remove.
4. Clean the wok and re-heat with a little oil and stir fry the garlic, spring onions and chilli flakes for 20 seconds.
5. Add the chicken back to the wok and stir fry for 20 seconds.
6. Pour the sauce mixture into the wok and cook for about 1 minute.
7. Add the beansprouts and cook for about 2 minutes.
