  Chinese Lemon Chicken

Ingredients: 

Chinese lemon chicken

1 pound boneless chicken, cut into 1 inch strips
3 spring onions (scallions) chopped
1 small piece of root ginger, shredded or grated
2 tablespoons rice wine vinegar or dry sherry
1 green pepper sliced cored and de- seeded
2 tablespoons soy sauce
rind of 2 lemons shredded
125g quartered mushrooms
2 celery sticks
2 or 3 lemons slices to garnish
2 tablespoons of ground nut or vegetable oil to stir fry

Preparation:

1. Mix the rice wine (or sherry), spring onions and ginger in a bowl. Add the chicken and toss to coat thoroughly and leave to marinate for 10 to 15 minutes

2. Heat the oil in a wok or pan at medium high heat. Add the green pepper, mushrooms and celery.

3.
