  Hunan Chicken

Ingredients:

1 1/2 chicken breasts cut into strips
1 egg white
2 spring onions (scallions)
1 tablespoon sherry
1 tablespoon sugar
2 teaspoons white wine vinegar
1 tablespoon corn flour
1 tablespoon soy sauce
1/2 cup chicken stock
1 teaspoon shredded ginger
2 teaspoons anise pepper grounded to a powder

 

Preparation:

1. Mix the egg white, corn flour and chicken strips.
2. Heat the wok to medium/high and stir fry the chicken for about 2 minutes until white.
3. For the sauce mixture, combine the sherry, vinegar and soy sauce in a small bowl.
4. Add the spring onions and ginger to the wok and stir fry for about 1 minute, then add the sauce mixture from the bowl.
5. Add the chicken stock along with the anise pepper and simmer until chicken is cooked and tender. Mix 1 teaspoon corn flour with 1 teaspoon water and add near the end of cooking to thicken sauce if preferred.
