Hoisin Pork Stir Fry with Noodles
Ingredients:
10 to 12 oz. egg noodles
1 pound tenderloin pork
3 garlic cloves, minced
1 teaspoon grated fresh ginger root
1 green or red bell pepper,
cored and cut into thin strips
1 small cup snow peas
1/2 cup chicken stock (broth)
1 tablespoon soy sauce
3 - 4 tablespoons hoisin sauce
1 tablespoon corn flour
1 small onion sliced
Preparation:
1. Boil the noodles according to packet guidelines.
2. Cut the pork into 1/2 inch thick slices and slice again through the middle.
3. Heat wok to medium/high and add some oil. Stir-fry the pork, ginger and garlic for 3 - 4 minutes until pork is cooked then remove.
4. Add the pepper and snow peas to the wok, and more oil if needed. Stir fry for 1 - 2 minutes.
5. Mix the chicken stock and corn flour together and add to the wok. Stir well and add the hoisin and soy sauce.
6. Add the pork, garlic and ginger to the wok again and stir-fry for 90 seconds. Serve pork mixture over the drained noodles.
