  Chicken Chow Mein


Ingredients:

2 boneless chicken breasts (about 7 ounces each)
1 ½ tablespoon cornflour
8 oz egg noodles
2 tablespoon sesame oil
½ sugar
2 tablespoon cornflour
½ tablespoon salt, or to taste
2 tablespoons rice wine or dry sherry
2 tablespoon oyster sauce
2 tablespoon of chicken stock
2 tablespoon light soy sauce
1 tablespoon dark soy sauce
3 oz mushrooms quartered with stems discarded
3 spring onions (scallions) chopped

Preparation

1. Shred chicken breasts and mix with cornflour and water 1 tablespoon cornflour 1 tablespoon water. Make sure the chicken it well coated. Add the light soy sauce, rice wine, sesame oil, salt and mix well. Leave to marinate for 15 minutes.

2. Boil the noodles for 3-5 minutes then drain them and plunge into cold water, drain again and toss with a dash of sesame oil.

3. Heat a wok to high heat and add one tablespoon of oil. Add the shredded chicken breasts when oil is very hot. Stir fry the mixture for 2 minutes and set to one side on a plate.

4. Add the remaining oil and re-heat wok until slightly smoking, then add the mushrooms along with the noodles and remaining oyster sauce, soy sauce rice wine and spring onions. Stir fry for 2 minutes and add the chicken.

5. Continue to stir fry for 3 – 4 minutes, or until chicken is cooked. Add the chicken stock and 1 tablespoon cornflour/1 tablespoon water mixture. Simmer for 1 minute or until sauce thickens.
