Chicken with Broccoli and Bamboo Shoots
Ingredients:
2 whole chicken breasts, cubed
1 tablespoon corn flour
1 cup of chicken stock
1 teaspoon salt
1 tablespoon light soy sauce
1 large broccoli head or 2 small ones 1 tablespoon vegetable oil
1 small piece of fresh ginger grated (about 1 tablespoon)
1 tablespoon oyster sauce
1 small can bamboo shoots
Preparation
1. Wash the broccoli heads
2. Boil the noodles and blanch in cold water
3. Heat wok and stir fry ginger for 1 minute, then add the chicken along with bamboo shoots and fry for a further 2 minutes.
4. Add the oyster sauce along with sherry, oyster sauce and salt. Pour in some of the chicken stock, and then add the corn flour mixed with 1 tablespoon of water to thicken sauce. Simmer for 3 – 4 minutes, and add more stock if required.
5. Serve on rice or noodles.
