  Chicken and Pak Choi Stir-Fry



Ingredients:

Chicken and pak choi stir-fry

1 1/2 to 2 chicken breasts
1 to 2 pak choi, cut diagonally
1 red pepper, cut into strips
1 small onion, finely chopped
1 tbls light soy sauce
1 tbls dark soy sauce
touch of sesame oil ( to taste )
groundnut oil for frying


Preparation:

1. Cut the chicken into strips of about 2 inches.
2. Heat wok to high until slightly smoking, and add the chicken.
3. Stir-fry for around 2 mins or until chicken is almost cooked, then remove and set aside.
4. Add the onions to the wok and fry for 1 minute.
5. Add the peppers and stir-fry for a further 1 minute before adding the pak choi.
6. Add the soy sauces', then sesame oil and stir-fry vegetables for a another 30 sesonds.
7. Re-add the chicken to the wok and fry with the vegetables until chicken is cooked through. Serve with boiled rice or noodles.
