Chicken and Noodle Stir Fry
Ingredients:
3/4 - 1 pound boneless skinless chicken breasts
1/2 pound medium or thin egg noodles
1 large carrot peeled and cut into very thin strips
1 small green or red pepper, cored, de-seeded and thinly sliced
2 - 3 tablespoons soy sauce
1/2 cup sliced water chestnuts
1 teaspoon dried cilantro
3 - 4 spring onions (scallions) finely chopped
1 teaspoon Chinese 5 spice
pinch garlic powder
1/4 cup chicken stock
1 tablespoon ground nut or vegetable oil
Preparation:
1. Boil the noodles according to directions on packet.
2. Heat wok to high and add the oil. Add the chicken, carrots, spring onions, pepper and stir fry for about 5 minutes or until chicken is white.
3. Add the water chestnuts, soy sauce, cilantro, chicken stock and sprinkle in the garlic powder and Chinese 5 spice.
4. Stir in the noodles and cook for 1 - 2 minutes. Serve hot.
