Chinese Recipes
Char Kway Teow
This delicious noodle dish is often cooked on the streets of Singapore
Ingredients:
1 pound fresh rice noodles
1 cup fresh bean sprouts
6 - 8 ounces fresh medium prawns, peeled, deveined and cooked
3 eggs, beaten
2 tablespoons fish sauce
2 tablespoon light soy sauce
2 tablespoons dark soy sauce
1/2 teaspoon brown sugar
2 Chinese sausages, thinly sliced
3 chilli peppers, or to taste
2 garlic cloves, finely chopped
4 ounces seafood or fish stock (broth)
1 small onion, chopped
vegetable oil for frying
Preparation:
1. Remove seeds from chilli and finely chop.
2. Mix the light and dark soy sauce with the sugar in a small bowl and set aside.
3. Heat the wok to high and add some oil. Stir-fry the onion and garlic for 2 minutes or until onion has softened slightly.
4. Add the chilli and continue stir-frying, then add the Chinese sausage.
5. Add the noodles and bean sprouts and stir-fry for about 2 minutes. Make sure to keep the mixture moving constantly.
6. Push the ingredients to one side and add the beaten eggs. Stir-fry until scrambled.
7. Add the soy sauce mixture, cooked prawns, fish sauce, seafood stock , mix well with the rest of the ingredients and stir-fry for another 1 - 2 minutes .Serve hot.
