  Beef and Broccoli Stir Fry with Bean Sprouts

Ingredients:

 

3/4 pound lean beef
1 tablespoon corn flour
1 garlic clove, minced
3 tablespoons soy sauce
3 to 4 broccoli stalks with florets
1 cup fresh beansprouts
dash sesame oil
3 spring onions (scallions) finely chopped
1/2 teaspoon grated ginger root
oil to cook

Preparation:

1. Cut the beef into thin slices. Mix with the soy sauce, corn flour, sherry, sugar and garlic. Set aside for 15 minutes.
2. Cut the broccoli into strips of 1 inch in length, 1/2 inch wide. Cut diagonally from the bottom of the stem ,working up to the top of the florets.
3. Put the wok on high heat and add 2 tablespoons oil. Stir-fry the broccoli for about 3 minutes, or less if you require more bite to it. Remove broccoli.
4. Add the ginger, spring onion and garlic to the wok and stir-fry for 30 seconds.
5. Add the beef along with the marinade mixture and cook until beef is almost done.
