  Beef with Green Peppers and Black Bean Sauce

Ingredients:

3/4 pound lean beef

Marinade:

1 tablespoon soy sauce
1 teaspoon rice wine or dry sherry
pinch of sugar (about 1/2 teaspoon)
1 teaspoon oil
1 tablespoon corn flour

Other:

2 green peppers, cored and de-seeded
1 tablespoon black beans
1 garlic clove, finely chopped
1/2 cup chicken stock, or more if required
1 tablespoon black beans (finely chopped) or black bean sauce
Oil for frying, as needed

Preparation:

1. Cut the beef into thin slices and marinate for about 25 minutes.
2. Cut the peppers into thin strips about 1/2 wide, and do the same with the onion.
3. Heat the wok to medium/high and stir-fry. Brown the meat until it is almost cooked and remove from the wok.
4. Add a little more oil to the wok, and stir fry the onion for about 2 minutes.
5. Add the peppers and stir-fry for 1 - 2 minutes.
