  Stir Fried Beef with Noodles and Oyster Sauce


Ingredients:

Stir fried beef with noodles and oyster sauce

1/2 pound lean beef
pinch of sugar
1 tablespoon soy sauce
1 tablespoon rice wine or dry sherry
1/2 teaspoon sesame oil
1/2 teaspoon corn flour
1 small carrot thinly sliced into
matchstick size strips
2 garlic cloves, minced
2 spring onions (scallions) finely chopped
2 tablespoons oyster sauce
half tin bamboo shoots
vegetable oil for frying

Preparation:

1. Thinly slice the beef and mix with the soy sauce, rice wine or dry sherry, sugar, sesame oil and corn flour. Set aside for 15 minutes and retain the marinade mixture.
2. Heat the wok on high heat, add 1 to 2 tablespoons of oil and stir fry the beef for about 3 minutes or until almost cooked through and browned then remove from wok.
3. Add more oil to the wok if required, and stir-fry the carrot strips, bamboo shoots, garlic and spring onions for about 2 minutes.
4. Add the beef, oyster sauce and the retained marinade to the wok. Stir-fry for 1 minute.
