Beef Lo Mein
Ingredients:
1/2 pound lean beef shredded
1/2 pound soft noodles
1 small carrot cut into thin strips
1 cup beansprouts
1/2 teaspoon sugar
1 garlic clove finely chopped
3 spring onions (scallions) finely chopped
2 stalks celery, shredded
3 mushrooms, chopped
oil as required
Marinade:
1/2 teaspoon rice wine or dry sherry
1 tablespoon soy sauce
1 teaspoon corn flour
2 - 3 drops sesame oil
1 teaspoon vegetable oil
Preparation:
1. Boil noodles according to instructions on packet.
2. Mix the beef with the marinade and set aside for 15 - 20 minutes.
3. Heat the wok and stir-fry the beef and mushrooms until slightly brown and almost cooked, then remove.
4. Add the ginger, garlic and fry for 30 seconds before adding the beansprouts and carrot. Fry for another 2 minutes.
5. Add the beef, mushrooms, celery shreds and stir-fry for 30 seconds.
6. Mix in the noodles with the rest of ingredients and serve hot.
