  Hois-in Beef Stir Fry

Ingredients:

3/4 pound lean beef, finely sliced

Sauce:

1 tablespoon soy sauce
2 tablespoons hoisin sauce
1/4 cup chicken stock (broth) or water

Marinade:

1 tablespoon soy sauce
pinch of salt
pinch of sugar
1 tablespoon rice wine or dry sherry
1/2 teaspoon corn flour

Other:

1/2 teaspoon ginger root, minced
6 ounces fresh snow peas
1 small carrot cut into thin strips 1 1/2 inches long
1 garlic clove, minced

Preparation:

1. Cut the beef into thin slices, mix with the marinade ingredients and leave aside for 20 to 25 minutes.
2. Blend the sauce ingredients in a bowl and leave aside.
3. Heat the wok on high heat and add 2 tablespoons of oil. Stir-fry the beef for 2 to 3 minutes until browned and almost cooked through then remove from wok.
4. Add more oil to the wok if required, and add the ginger and garlic. Stir-fry for about 40 seconds.
5. Add the snow peas and carrot. Stir-fry for about 1 minute. Sprinkle a little salt and soy sauce to season.
