Beef Chow Mein
Ingredients
1/2 lean beef cut into thin strips
Marinade:
1 tablespoon corn flour
1 1/2 tablespoons soy sauce
Couple drops of sesame oil
Other:
1 onion sliced
1/2 to 1 cans bamboo shoots
1 carrot thinly sliced
6 to 8 ounces fresh egg noodles (dried packet noodles can be used)
1/2 cup beef or chicken stock mixed with 1 tablespoon corn flour
1 spring onion cut into 1 inch diagonal pieces
Ground nut or vegetable oil for frying
Preparation:
1. Marinate the beef for the Chow Mein for 10 to 15 minutes, fry until almost cooked and slightly browned , then remove from the wok.
2. Clean the wok then heat to high until slightly smoking, then add about 1 tablespoon of oil
3. Add the onion and spring onion and stir fry for 1 minute
4. Add the carrot and bamboo shoots, and stir fry for a further 1 minute or so
5. Re-add the beef to the wok and continue to stir fry with rest of ingredients for 1 to 2 minutes
6. Pour in the beef or chicken stock/corn flour mix and stir until sauce clears and thickens slightly
7. Add the cooked noodles and mix thoroughly with rest of the ingredients and add some soy sauce
8. Serve the beef Chow Mein in a bowl or plate, and garnish with finely chopped spring onions if desired
