Beef and Bamboo Shoot Stir Fry
Ingredients:
1/2 pound lean beef
1 teaspoon corn flour
1 tablespoon finely chopped spring onions (scallions)
dash of sesame oil
1 tablespoon dry sherry or rice wine
1 small cup bamboo shoots
1 onion finely sliced
2 tablespoons oyster sauce
1 tablespoon soy sauce
vegetable oil as required
Preparation:
1. Cut the beef into thin slices and mix with the soy sauce, dry sherry, spring onions, corn flour and sesame oil. Leave to marinate for 20 minutes and reserve marinade ingredients.
2. Heat the wok and add the oil. Stir-fry the beef for about 2 minutes until almost cooked then remove from wok.
3. Add the sliced onion, bamboo shoots, and fry for 2 minutes.
4. Add the beef to the wok again along with the reserved marinade and oyster sauce.Stir-fry with the vegetables for 1 minute. Serve hot.
