Bang Bang Chicken
Ingredients:
1 pound chicken breasts (with bone)
1 tablespoon shredded spring onions (scallions)
1/2 teaspoon ground Sichuan Peppercorn
1 carrot
1/2 teaspoon salt (or to taste)
1 teaspoon sesame oil
1 teaspoon sugar
1 teaspoon sesame paste (if this is unavailable, then use chunky peanut butter as a substitute)
2 teaspoons hot chili flakes (optional)
Preparation:
1. Place the chicken in a large a saucepan and add enough water to cover.
2. Boil the chicken for 15 - 20 minutes or until chicken is white and cooked through, then remove and allow to cool.
3. De bone the chicken and cut into very fine strips.
4. Peel the carrot and slice into strips about the size of matchsticks.
5. Arrange the chicken in a dish or on a plate and sprinkle with the shredded spring onions and carrot strips.
6. Mix the soy sauce, sesame paste or peanut butter, chili flakes, peppercorns, and sesame oil in a bowl.
7. Pour the mixture over the carrots, scallions and chicken, then serve.
